I'm sharing this for the Incredible group that is looking for great egg recipes here.
This is one that is a "free-for-all" with no official "recipe." My husband and I were looking for healthy breakfast foods that were quick and easy. So we came up with this...ok, I'll be honest - HE came up with this! LOL
The amount of each ingredient varies on how much you want to make. We usually do enough to last for the week.
1 dozen eggs
chopped spinach
whatever other leftover veggies you need/want to use up
grated cheese, to taste
Mix the first 3 ingredients, top with cheese and bake! then in the morning, you just heat & eat. Or, add some roasted potatoes for a nice dinner meal too.
My kids have named this recipe "speggs" for Spinach & eggs.

Oh my...I'm soooo far behind on checking comments! my apologies - uh..good question. My husband usually does it which means basic baking instructions of 350 degrees until the cheese melts! lol probably about 20-30 minutes
Randall - yes, it is good to add other things. What we add just varies on what we have for leftovers at the moment - anything from leftover chicken/beef, to pasta, to other veggies, etc. Kinda like soup - just keep adding whatever you need to eat up!
