This is a family staple for us! We never have a family get-together without these eggs on the table. Mom always makes a HUGE batch of these (several dozen eggs) since she always makes sure to have plenty to send home with each family after the event (if she didn't... we'd fight over the leftover! LOL!)! I have reduced Mom's recipe to make it more manageable for most families!

Pickled Eggs and Beets
12 hard boiled eggs with shells removed
3 cans of sliced beets including liquid from the can
2 medium onions (cut in half then sliced)
1/2 cup vinegar (I use cider vinegar)
In a large jar or container, add all ingredients. Add enough water to ensure all of eggs are covered. Gently stir the ingredients then let sit in the fridge for at least 48 hours.
That's it.... it's really that simple!
