So, last week I talked about this site called E-mealz (if interested you can pm me for more info) that gives you a meal plan & shopping list based on the sales of your favorite store. I went yesterday and did my shopping. I only did 6 of the 7 meals figuring there'd be leftovers from at least one meal, or if not we have other things at home to eat, but I wanted to give it a good honest shot!
After my shopping, I averaged out the cost of my meals (for dinners only, by the way) and it averaged out to $8 per dinner. We're a family of 4 so not too bad, but I still think I can do better sometimes.... I will say that today was a very stressful day for me and not having to think about what to do for dinner was fabulous!!!
But, tonight's dinner was Catfish & corn on the cob. The meal plan actually called for a sweet cole slaw also, but no one in my family likes cole slaw (except for the stuff you get at KFC!!!), so I skipped the slaw. The catfish recipe was very good. I was very pleasantly surprised as I'm not a big fan of fish and I REALLY did not think my kids were going to like it. But, not only did they eat their first portion, they asked for more!!
All I did was dip it in egg, then Italian bread crumbs with some Garlic SEasoning Salt and baked it. I used our NuWave oven (which is a convection oven) instead of the regular oven. Next time I'll use the regular oven as it will make the breading crispier and I think we'd all like that better. Oh, and this recipe has the points listed for Weight Watchers. However, I used real eggs instead of egg substitute so not sure if that made a difference.
Tomorrow night is shrimp scampi with linguini and I don't know what else. Yum!
Oh and my total shopping spree for the week was $88 but I saved about $60 in coupons/sales and many of the items were stocking up while things we regularly use were on sale. So, not bad!

I would NOT do the shrimp...yuck! I'm not sure about the fish either...only fish I eat is the frozen fish sticks or fillets LOL
I take it this costs money? give me more info so I can check it out and show Steve and see what he thinks.
I only get my food stamps for 2 maybe 3 months.
