First a little background: My mom lives in Florida, and like nearly everyone else in the state has some sort of citrus tree within walking distance. Well in this case, she has a massive lemon tree in her front yard. (She also has several orange trees in the backyard, but I've put a pretty big dent in the local orange population since I've been here).
Anyway, she has a ridiculous amount of lemons to do something with. At the moment, I'm taking a break from juicing all of the lemons. We figured the best way to keep all of the lemon juice was to squeeze them all, then freeze the lemon juice in ice cubes. That way when a recipe calls for lemon juice, all we have to do is defrost the lemon cubes.
Since the amount of lemons we have is nearing the point of insanity, I need some recipes that use lemon juice(if possible, use a lot of lemon juice).
What recipes do you like that use lemons/lemon juice?

Lemon butter is good on many breads.
Lemon cake and cupcakes are great (especially with lemon frosting). These also freeze well.
Lemons also make a great sauce for bread pudding -- and again, it freezes. The same sauce can be used on crepes (with powdered sugar).
Fresh lemon/lime mojitos are awesome!
If you grill you could grill some lemon (I like lemon pepper seasoning on steak but I bet it would taste better fresh!) along with other fruits and/or veggies and meat. You could also make a marinade with lemons and other seasonings of your choice. You could bottle and store it or share it with neighbors.
