These were so awesome and SO easy! Matt, who is not a big bean eater, loved these. The key is very flavorful potatoes and beans.
vegetable oil
4-6 potatoes, peel and diced
Adobo seasoning (I used my homemade)
1 clove garlic, chopped
Refried Beans (your favorite. I used homemade)
corn tortillas
shredded Mexican blend cheese
salsa
Heat oil in a large frying pan over medium high heat. Add potatoes; season generously with Adobo. Fry til crispy brown; stir in garlic and cook another minute or so. Drain on a paper bag or towel.
Meanwhile, heat beans and fry tortillas til soft.

Layer tortillas with beans, potatoes and your favorite toppings. 

I used cheese and my habanero sauce and served with guacamole cream.

I'll bet it would work w/o the cheese too, for my vegans. The spicy potatoes are something they would surely enjoy a lot!
