I was really looking forward to dinner tonight, as we were going to eat our first homegrown potatoes. Sky dug up the potatoes this morning, which you can see here. We only had a handful of potatoes, so there were not enough for potato salad. I therefore decided to go with oven-roasted potatoes, and I made a marinade of EVO and fresh herbs from the garden.
The boys had requested spicy meatballs, so I made sure to bring in a couple of red chili peppers.
This is our potato harvest all cleaned and ready for the marinade.

We have lots of chili peppers, so we are sharing with the neighbors.

I managed to find two beautiful red peppers.
I then found some rosemary.

I do not know what happened to my basil, it looked great two days ago.


We have lots of green tomatoes.

We had funny bread, due to an earlier mishap. When I was going to make icing for the cake earlier in the afternoon, I was too cheap to turn on the light. I fished out a bag that looked like powdered sugar from the bottom of the fridge, and I started mixing it with water. When I took a closer look, it turned out to be bisquick mix:) I added an egg, and yes the result was funny bread:)
The spicy meatballs looked very spicy.

This is Roshane's plate, as I passed on the meat balls. We had a salad and oven roasted squash as sides.

The potatoes were so delicious, that I could have eaten them all. I did manage to save a few for my husband's plate though.

I wanted to go to the grocery store today but every plan I made today backfired. We are out of everything so our dinner was totally lousy.
Alex the meatballs where made with groundbeef. I diced the chili pepper really thin, so it almost became fluid (left out the seeds), and then I added diced garlic and a little bit of the herbs. I also added paprika, garlic powder, Zatarains creole seasoning and some other seasonings we have....whatever I know the men in the house likes. I fried them on the pan in a tiny bit of extra virgin olive oil, and I made them drip on a sheet of paper towel, when they were done.
I had tofu and black bean enchiladas tonight.
Danielle is making frozen pizza tonight....I really wish Frankie (our newest dog) didn't eat the herb garden when we were in CA....
I'm itching to get something planted. Maybe this weekend.
I wish I had the knowledge and patience to grow some of my own veggies and herbs, but I don't think I could keep them alive.
My husband and I would love the meatballs though.
