I made this several months ago to serve with pasta, but completely forgot to post the recipe.
1 cup whole wheat flour
1 cup flour
½ cup old fashioned oats
2 t baking powder
½ t baking soda
½ t salt
4 oz smoked Provolone, grated
1½ cups light or dark beer (I used Dunkelweisse), flat
Preheat the oven to 400°F. Spray a small loaf pan with cooking spray. Set aside.
In a large bowl, stir together dry ingredients. Add cheese and beer and stir til just moistened. Scrape the batter into the pan and spread evenly.
Bake til a toothpick inserted in the center and all the way to the bottom of the pan comes out clean, 35 to 40 minutes. Let cool in the pan on a rack for 5 to 10 minutes before removing to a rack to cool completely.
