I thought I was going to miss the sausage, but I didn't! The sofrito and sazon give this such flavor!
1 onion, diced small
2 garlic cloves, chopped
2 t chili powder
1/4 cup sofrito (I used homemade)
1 small jar green olives, rinsed
2 large potatoes, peeled and cut into bite size pieces
2 packets Sazon Con Azafran seasoning
1 1/2 cups cooked pinto beans
hot sauce to taste
Heat a little olive oil in a Dutch oven over medium heat. Add onions and garlic and sauté til onions are softened, about 5 minutes. Stir in chili powder and the Sofrito and stir til well mixed. Add olives to and simmer til warmed. Remove from heat and set aside.
Meanwhile, boil potatoes in a large saucepan over high heat. Once potatoes start to get soft, add seasoning packets. Reduce heat to low.
Add some of the potato water to the sofrito mixture and stir til blended. Add beans and olive mixture to the potatoes and mix well. Heat through.
I served the beans over rice with lots of hot sauce.
