I had intended to make grilled cheese sub sandwiches on the fresh bread I made, but when I started digging around in the fridge I found all kinds of goodies to make veggie style subs.
1 large sub bun (I used homemade)
Dijon mustard
sliced cheese (I used Muenster, Provolone, baby Swiss)
roasted red pepper
green olives
red onion
cucumber
lettuce
Slice bun in half crosswise, then split lengthwise, leaving a "hinge". Top with mustard and cheese. 
Broil til cheese is golden and melted.

Load up with your faves.
I served these delightful subs with a vegetarian take on Italian wedding soup using vegetable broth, orzo and tons of fresh spinach.

I am taking easter off...going out to eat in a bit with my boys....and man I am hungry....
Made parmasan chicken tenderloins last night..... and some buttered pasta...
Ihope they have olives on the buffett today....those look real good....for some reason....
