Had a taste for home today so I made 2 ofthe dishes my mom made for dinner. Mom worked everyday of her life since eight grade, and loved it when casseroles came into fashion ( and later when going out to eat became the thing to do, but that is another story.)
Tonight I made homemade scalloped potatoes with ham, a regular weekly dish at my house growing up, and corn pudding.

Casseroles are fairly easy once you have them put together. This one really has no official recipie, but I will list the ingredients below.
8 slices of ham, not to thick, I cut them in half
4 larger red skin potatoes, peeled, and sliced with a mandolin( thin)
1/2 medium onion diced small
1/2 pound cheddar cheese
1 bag shreaded cheese(any you like or have)
4 tablespoons butter optional I am sure
salt and pepper to taste( I used garlic and pepper salt)
1 cup milk
Depending on the depth of your pan, layer your ingredients begining with the potatoes, onion, cheese, ham. continue layering but reserve some of the cheese for the top. Pour milk over the layered ingredients.


Cover the pan with foil and bake at 350 degrees for about 25 minutes removing the foil for the last 5 minutes( or so).
Allow to set for a few minutes before serving.

Corn Pudding
1 can cream corn
1 can whole corn drained
2 eggs
1/2 cup milk
seasoning to taste
I use a whip and combine the milk and egg, add seasonings, then the cream corn and then the whole corn.
Pour into a pan and cover with foil. Bake at 350 for aprox. 30 minutes removing the foil for the last 5 minutes(or so.)

I think the one thing I kept thinking when I made this way....theres no green..no red...but it did taste good and that is what mom was all about.
I just dumped a good dose of money into building materials and some dental work so using what I have and what is on sale is going to be the " focus" of this next months grocery buying(or 2)
plus we will get another meal out of the casserole...that I like.
I am not big on ham ham, but Roc is laid off and is big on sammiches...so this purchase covers a lot of territory...
Wild rice in the corn pudding as Madame D. mentioned, sounds good! I think I'll try that next time I make mine... separate from the time I make the ham casserole, as together, I think they make for a heavier meal than I would want. I would prefer a salad with the casserole or a different vegetable, like steamed green beans or asparagus maybe?
