The beginning of meatless Month started with these delicious wraps. When you load these up with yummy veggies, you won't even miss the meat!
I served them with reduced fat chips.
whole wheat flatbread (link to recipe follows)
Avocado Mayo
sliced provolone cheese
lettuce, torn into small pieces
red onion, thinly sliced
sprouts (I used a spicy blend)
tomato, thinly sliced
salt and freshly ground pepper
Layer tortillas with ingredients as you prefer. Seal with a toothpick and serve immediately.
Avocado Mayo
1/2 very ripe avocado
2 T mayo
1 T buttermilk
fresh lime juice
chopped fresh cilantro leaves (optional)
sea salt and freshly ground black pepper, to taste
In a small bowl mash avocado with mayo buttermilk, lime juice, cilantro and salt and pepper til smooth. Taste and adjust as desired.
Refrigerate for 1 hour before serving.

he is a meat man....
I ont he other hand would eat like this most of the time if I lived alone...specially in the summer...I tred to buy an avacado this week....but they were all from chile adn none were ripe...I did however find a really nice pineapple..and a terrific bottle of tequila....!!!!
