For those of you who have never heard of "Artisan Bread in Five Minutes a Day," and you are thinking, that is just too good to be true! Well, it is good, and it is true! And there is NO KNEADING. This was life saving for me, though I am the child of a Master Baker and love to make bread, I have Fibromyalgia and the kneading would leave my arms very sore for several days. Another great thing is believe it or not, this is economical! I get 2 large Artisan(round) loaves per batch, and at least 2 batches per a 5lb bag of flour, which costs $1.62. I loaf of comparable bakery bread would run you at least $3-$5. To get you acquainted with our subject/obsession for this group let me provide you with a few background sources.

Ok, here's the master recipe:
Combine
6 1/2 cups unbleached flour(You can use regular bleached white flour but it does not rise as high as the unbleached)
1 1/2 TBSP Yeast
1 1/2 TBSP Kosher Salt(has no iodine)
After dry ingredients are mixed stir in 3 cups lukewarm distilled water(hard water or water with high chlorine content like ours interfere with the yeast.) After ingredients are completely mixed, cover and allow to sit out at room temp for 2-5 hours, at which point you transfer it to the fridge for up to 2 weeks(keep covered tightly so dough doesn't dry out.) WHenever you feel like having some freshly baked bread, break off a hunk of dough, shape it, allow to rise on sprinkled cornmeal, slash the top with a sharp serrated knife just before baking(the dough will puff up quite a bit and this will look better then your dough having a blowout and looking like a life form from another planet.) and bake. When your loaf has a nice crust on it, remove from oven and allow it to set for 20-30 minutes, if you cut it right away the center may be a little doughy.
Some of the best things in life are the simplest of pleasures, and this is one of them...slicing into a loaf of this delightful crusty bread, spread in with some sweet creamy butter, and bite into the cure for a hard day in the cold cruel world. Suddenly, things aren't so bad, your Mother loves you, and now the toughest thing you will have to deal with is, do I have to share?
