This easy and delicious recipe was adapted from Cooking Light magazine.
2 cups flour
2 1/2 T sugar
1 t baking soda
1 t salt
1 1/2 cups buttermilk
1/4 cup olive oil
1 egg
Preheat oven to 350°. Spray an 8x4" loaf pan with cooking spray. Set aside.
In a large bowl, stir together flour, sugar, soda and salt. Make a well. Set aside.
In a medium bowl, whisk together buttermilk, oil and egg. Add buttermilk mixture to flour mixture, stirring just til moist.
Pour batter into prepared pan. Bake 45 minutes or til a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on a wire rack; remove and cool completely on wire rack.
Slice and serve as desired. I served mine with vegetable beef soup.

Buttermilk substitute...Put a couple teaspoons of vinegar in a measuring cup and then fill it to the 1 1/2 c mark with milk. Let it stand for a few moments...
I usually keep dry buttermilk on hand for those times, but use this in a pinch.
Robiyah, I think its milk and a small amount of lemon juice or vinegar but I don't know the proportions.
