So, last year I attempted to be a better gardener. I think I succeeded. You can look at my video from last year to see what a horror show it was. The dead tree is down in the backyard and I did grow some cherry tomatoes last year. I'm getting better at herbs and I'd really like to try my hand at some vegetables this year. Any advice for this novice gardener? I'm thinking I'd like to try beets specifically since I started canning last year. How many should I plant? What are my soil and varmint concerns?

(I say that about everything)
Root crops can get eaten, destroyed by under soil bugs. Keeping this in mind when you plant, such as raised beds or manure without warms etc. Buy bagged menure for instance.
Keep in mind your growing zone. Your weather, water (hard water, soft water ect.). Some plants no matter how hard one tries they just refuse to do good. Do not be so hard on yourself. Make it fun and stress free!
Heck I know someone who put $20,000 into a green house. Claiming to have $3000 a month operating costs. If what he says is true his plants should look good!! Even flowing $100 dollar bills, money can grow nice things. Some of us don't have that kind of money... do not try to keep up with those kinds!
The only root veggie that I have grown are carrots and the guessing how big they were under the ground just killed me. I always wanted to pull them up and check on them!
You have that great chain link fence, peas would do well there and mask the fence a bit. They are painless to grow. (IMHO)
