Home made vegetable soup:

The potatoes that i forgot to have in the top shot. almost forgot to put them in.
1-2 pound beef shoulder roast
1 tbs olive oil to brown the meat in I could not find mine so I used vegetable oil this time but I don't like using it but it works in a pinch
1-2 medium onions I like oso's but cooking onions work just fine in this too
1 large can of stewed tomatoes I prefer the Dei Fratelli
1 can a garbanzo beans if you don't like those use kidney beans or an extra can of green beans.
1 12 oz can of v8 or generic equivalent. I use what ever is cheapest at the time. dont want the salt use the low sodium variety
1/2 of a small head of cabbage (more or less depending on how much you like)
2 cans of whole carrots or cut carrots or 1 lb of mini carrots
1 to 2 8 oz packages of mushrooms depending on what you like baby bellas also work great in this.
2-3 cups diced potatoes I used russet but also like to use a combo of reds and Yukon gold with the russet from time to time to add variety because I make this a lot
1 can of green beans
sea salt to season when serving
a big spoonful of sour cream in the center of this is really good too, thats how I will have leftovers tomorrow for lunch
first brown the meat I do it in a hot crock pot/deep fryer, made by presto and found at walmart for 24 dollars. I could not live with out mine. This can be done in a regular crock pot if you brown your meat on the stove top. I like just dirtying one thing.
open cans and dump everything in if you are using canned carrots use only the water in one can and reserve the other in case you need to add liquid along the way. If you don't want to use the water in the cans drain veggies and add more v8
peal and quarter onions toss in
chop cabbage toss in
cook about 6 hours during the last hour add the mushrooms I don't like them over cooked.
serve with biscuits or corn
bread i use easy jiffy mix because I suck at making home made breads. and I adore sweet corn bread.
