The basic recipe I found somewhere online, but I tweaked it a few times and this is the final result. The honey, being natural, is better than the usual brown sugar/white sugar blend, and gives a lighter taste to the cookies. But sugar is sugar, and the amount of honey can be reduced by as much as 1/4 cup (or even more) depending on your sweetness preference.
The original recipe called for cinnamon, but my kids didn't like it as well as without.
3/4 cup (more or less to taste) honey
1/2 c butter
1 egg
1 tsp vanilla
1 Tbl milk
Cream butter and honey, then add egg, vanilla and milk.
Add:
1 1/2 cups whole wheat pastry flour (or regular whole wheat)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Mix well. Then add:
1 cup whole rolled oats
1 cup chocolate chips (or less)
1/2 cup coconut (optional)
1/2-3/4 cup walnuts (optional, tastes fabulous with them)
Oven 350
Bake 10-12 minutes.
I recommend a test cookie to be sure they come out the way you like them. There's nothing worse than a whole tray of flat cookies.
