My adaptation of Creole Mustard Potato Salad

This is how I change up the Creole Mustard Potatoe salad to suit my family. ( Everything in bold is how I change the recipe)
My family loves this recipe as it adds just that right zing, it is mildly spicy and delicious. This recipe is perfect for our family outings as it very simple to prepare, quite tasty...and my family does not stop eating it.
Ingredients:
3 pounds red potatoes ( I cube them)
1/3 cup mayonnaise
2 TBsp Apple Cider vinegar
1/3 cup Zatarain's® Creole Mustard
1/3 cup sour cream
1/2 teaspoon Zatarain's® Creole Seasoning
1/2 teaspoon sugar I add 1 Teaspoon of sugar
- Salt and freshly ground black pepper
- 1 small Vidalia onion, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, chopped
1 1/2 cups diced tomatoes
1/2 cup crumbled cooked bacon (optional)
2 tablespoons thinly sliced green onion
Directions
1. Add potatoes to lightly salted water to cover in large saucepot. Bring to boil on high heat. Reduce heat to low; simmer 20 minutes or until potatoes are fork-tender. Drain, then quarter potatoes.
2. Whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt and pepper. and then I add the Creole Seasoning
3. Add warm potatoes; toss to coat well. Add tomatoes, onion, celery & garlic, bacon and green onion; toss lightly. Cover.
3. Refrigerate at least 2 hours or until ready to serve
