We had this for supper tonight along with Mexican Rice, a tossed salad, Telera rolls and limeade ... the menu was a special request from our daughter.
CHEESE ENCHIRITOS
1-8 count CRUZ soft flour tortillas
1-31 oz. can refried beans (regular or fat-free)
1-19 oz. can Old El Paso MILD enchilada sauce
4 cups regular shred cheddar cheese
1-2 bunches sliced green onions
1. Heat oven to 350 degrees.
2. Combine refried beans in a bowl with 1/2 cheese.
3. Put enchilada sauce in another bowl. Dip tortilla in sauce and lay on plate.
4. Put bean/cheese mixture in center of tortilla and roll up.
5. Place filled tortillas in 9x13 casserole seam side down. Pour remaining enchilada sauce over all. Sprinkle cheese on top.
6. Bake at 350 degrees for 20-25 minutes or until cheese melts.
7. Sprinkle top with sliced green onions and allow to set for 10 minutes. Serve with Fritos, Mexican rice and limeade.
