I had the most amazingly tasty dinner tonight that I have made in some time. Working with a strict budget often causes me to think tasteless or boring. Not tonight!
I marinated three nice turkey wing drumettes in a honey balsamic most of the day and then roasted them in a low 250 degree oven for around 4 hours turning up the heat near the end to 325 degrees when I started the rice cassolet. When well colored and meat came easily off the bone I removed it and kept it warm while finishing the rice.
The rice dish was the best I have created in a while!
I poured 2 cups of water and 1 cup of white rice into a glass(bread) baking dish.
Stirred in
1/2 cup sour cream
1/4 cup dry parmasean cheese
2 tablespoons butter
3 button mushrooms,diced
1/4 yellow onion
and topped it with 1/4 of a sweet red pepper and some chopped green onion greens.
Covered with parchment and foil and baked in 325 oven for aprox. 30 minutes. During the baking I occasionally lifted the covering and carefully pushed the ingredients around the edge till it looked like the liquids were incorporated and did this till they no longer needed for this to be done to stay incorporated. At that time I lightly dusted the top with soul food seasoning and garlic pepper salt, left the cover off, and continued to bake till all bubbling liquid was assorbedand the top lightly browned.
I promptly ran out to the hot house and gathered a few baby greens of buttercrunch lettuce, swiss chard, spinach, curly parsley and some citrus tasting basil and dressed it with a little Honey Balsamic salad dressing and gave myself a treat of some olives I have been hording(lol!)

With nearly everything being done in the oven it gave me time to enjoy the last few hours of my day off and few dishes to do....
NOW that makes it a keeper in my book!
