I am posting this exclusively to the Be Prepared and Back To Basics Groups. This a salad that we all may be eating before long. This is such a great salad. You will wonder why you had not been making this before now.
Be very careful not to pick the dandelion leaves from yards or other places that have chemicals sprayed on them. Your leaves need to be picked while the plant is young and not bearing flowers yet.
Dandelion Green Salad
4 cups dandelion leaves, cut (thoroughly wash the greens)
4 slices of bacon
1 /2 cup vinegar
2 tablespoons sugar
1 /4 cup water
1 teaspoon salt
1 /4 teaspoon pepper
1 tablespoon onion, chopped
4 hard-cooked eggs
Carefully pick over the first dandelion leaves and cut into inch lengths. Be sure to clean the dandelion leaves very well. They must be gathered before the plant blooms. In a skillet, fry the bacon until crisp. Remove from pan. Keep the grease & add the vinegar, sugar, water, salt, and pepper to it. Stir until well blended. Cool and toss dressing through greens and onion. Heap salad in a mound and garnish with strips of bacon and slices of egg.

We still mix ours with other greens sometimes too.
