I made these wonderful cheesey delights from an old TV Food Network recipe - from George Stella.
These are so easy to make and are also great as a crouton type thing on salads. Enjoy.

Low Carb Cheese Crackers

2 slices American cheese -- from Deli counter
2 oz Colby-Jack cheese -- deli-sliced
1/2 ts salt
1/4 ts chili powder
1/4 ts garlic powder
Make sure that the American Cheese you buy is NOT "cheese food" but real cheese bought at the deli counter. Not the packaged kind in the dairy aisle.
Preheat oven to 400 degrees F. Line 2 rimmed cookie sheets with parchment paper OR a Silpat liner.
Stack the slices of American Cheese and cut it into 16 small squares. Separate the pieces and transfer them to a small bowl. Combine seasonings and add them to the cheese. Shake around and coat well.
Place on one of the prepared sheet pans, 4 rows of 8 pieces of cheese.
Stack the Colby cheese slices and cut them into 24 small pieces and arrange them on the other prepared pan - 4 rows of 6.
Bake both sheet pans until well-browned and crispy, about 7 to 7-1/2 minutes. If undercooked, they'll be soggy so don't be afraid to check them and put them back in the oven if they need more time.
Cool the crackers completely before storing them. Store on the counter in an airtight container at room temperature for a few days.*

NOTES : Risa's notes:
* If they are underbaked, they will be soggy when stored so make sure they are completely crisp and cool before storing. If they are a bit soggy, then refrigerate them. When you want to eat them, remove from refrigerator about 1/2 hour before snacking. Then snack away!
