Usually when I make pizza I make rather thin crust, however, when I got my latest Uno Grill newsletter, the feature was deep dish pizza. It made me hungry for it!
My pizza sauce was made by infusing several cloves of garlic in olive oil, then simmering about 30 minutes with a large can of tomatoes, tomato paste, homemade Italian seasoning and plenty of salt and freshly ground black pepper. It cooled, then about 1/4 cup freshly grated Parmesan was stirred in.
I used my usual pizza crust recipe: http://www.gather.com/viewArticle.jsp?articleId=281474977227429
shredded Italian blend cheese
smoked ham, shredded
hot Italian sausage, removed from casing and browned
pepperoncini peppers, sliced (I used homemade)
sliced black olives
thinly sliced red onion
homemade pizza sauce (or your favorite)
Preheat oven to 450°.
Drizzle a cast iron skillet with vegetable or olive oil. Press dough into skillet and up the sides.
Sprinkle in cheese.
Layer on toppings.
Pour sauce over the top, adding as much as you like.
I added green olives just to Matt's half. As much as I love them, I have never liked them on pizza.
Bake 25-35 minutes. Remove from oven and let rest for a few minutes before slicing.
