CHEESY TUNA NOODLE CASSEROLE

7.6 OZ CHUNK TUNA
8 OZ DRY EGG NOODLE
½ SMALL ONION MINCED
2 MEDIUM MUSHROOMS SLICED THIN
1 CAN CONDENSED CREAM OF MUSHROOM SOUP
1 ½ CUPS MILK
2 CUPS CHEDDAR CHEESE
¾ CUP PARMASEAN CHEESE (RESERVE ¼ CUP)
4 TABLESPOONS BUTTER
PINCH CRUSHED RED PEPPER
2 TABLESPOONS GARLIC PEPPER SALT
2 TABLESPOONS SEASONING OF CHOICE
2 TABLESPOONS MAYONAISE
1 ½ CUP CROUTONS PROCESSED TO CRUMB

PAR BOIL THE EGG NOODLES TILL SOFTENED, BUT NOT FULL COOKED
DRY SAUTE ONION AND MUSHROOMS
MIX TOGETHER IN A CONTAINER: CREAM OF MUSHROOM SOUP, MILK, AND MAYONAISE

ADD TUNA TO ONION AND MUSHROOM AND SEASON WITH SALT, RED PEPPER AND ADDITIONAL SEASONING OF CHOICE
Place 2 tablespoons of butter in the bottom of each casserole dish (or all in one large dish)
Place a layer of noodles on top of the butter
Place seasoned tuna, onion, and mushroom mix on top of noodles

Place 1 ½ cups of cheddar cheese on top of the tuna mix
Sprinkle Parmesan cheese on top of cheddar cheese

Place another thin layer of noodles on top of the cheddar cheese
More of the cheddar cheese and again the Parmesan
Pour the mushroom soup, milk, and mayo mixture over the whole casserole and bake in a 350-degree oven for 25 minutes till bubbly

Mix together the reserved Parmesan cheese and processed croutons

Sprinkle on top of your casserole and broil for 3 minutes.

Allow casserole to set for about 10 minutes before serving.
Makes 4 good sized portions.
I thought my other half might want more tuna in it, but he didn't complain.
This turned into one really wonderfully tasty dinner and I am quite pleased!
I was discussing last night how I was bored with winter eating and was trying to think of things I haven't made in a while for one reason or another.
Tuna casserole went by the wayside YEARS AGO.. mostly due to the fact that my boys didn't care for tuna as teenagers.
I have to admit this was not extremely cost effective. Possibly if you have all the ingredients already on hand, but I had to purchase all of it on my way home tonight.
The remaining ingredients will work into other dishes later this week, so the cost will difuse I am sure. The only reason I am making a issue of this is because of the cost of dairy products right nowis outrageous in my opinion for generic brands! Feeding a family of four, one should not be tempted to just go to Mickey Doodles and eat off the dollar menu to save money!
