I realized the other day that I had 4-15 oz cans of Libby's Pumpkin Puree. I saw a segment on Diners, Drive-Ins & Dives called "What's for Breakfast?". On it was a place called Dor-Stop. They showed the cook making their famous Pumpkin Pancakes. I opened the accompanying book but there wasn't any recipes for this.
I had taken notes when I watched the show (that is what I do). So, I tried to re-create their Pumpkin Pancakes, with some success.
I made these this morning. They were so good. Even my son loved them. I'll be making these again.
1 recipe pancake batter*
1/4 cup pumpkin puree (or more to taste)
1 tsp pumpkin pie spice
2 tbsp cinnamon sugar
I mixed it all together. It was kind of thick so I added some water to make it a bit thinner. I cooked 2 pancakes at a time in the pan and then served them with maple syrup and a sprinkling of cinnamon sugar.
* I made the pancake batter from a homemade mix that was 2 cups of mix, 2 eggs, 1 cup milk. I added some pumpkin puree, 1 tsp pumpkin pie spice and 2 tbsp cinnamon sugar. Sooo good.
