I fell in love with the new double edition of Southern Living December 2008.
Not just for its 149 kitchen tested recipies..
or for the picture of what I now know will be the decor of my walls...
Southern Living has always impressed me in those matters..
but I ACTually..found a recipie that I am certain I would have NEVER thought of on page 190 for an unusual party snack.
It calls for turning canned chickpeas or black-eyed peas into "unique and affordable party snacks."
I thought of all my chickpea loving friends when I read this...and me being a fan of roasted seeds and nuts...well I couldn't Pass up sharing it, even before I tried it!
Preheat oven to 425
Combine 2(16 oz) cans of rinsed and drained chickpeasor black eyed peas
3 tablespoons of olive oil
1 1/2 teaspoons of chii powder
1 teaspoon of pepper
3/4 teaspoons of ground cumin
and 1/2 teaspoon of salt
in a medium bowl
Transfer mixture into a lightly greased jelly roll pan
bake 45 to 50 minutes or until crisp and dry
stirring every 10 minutes...
cool and serve the same day.
And a note to my foodie friends....Southern Living is looking for busy weeknight supper recipies. If they publish, they send you 20 bucks and a copy of their annual cookbook.
GOOD LUCK!
