Tonight I made enchiladas with fresh home cooked tortilla chips. They were very easy to make. I got a deep pan and filled it with canola oil. I cute the tortillas into 4 triangles. I then deep fried them. This was quick and easy!
The kids loved the fresh and warm tortilla chips. I added a little salt once the chips were all cooked.
We ate them with the enchiladas and also sour cream,cheese,tomatoes,lettuce,olives and salsa!
They were delicious! These are much better than any you can buy already cooked in the store.
