INGREDIENTS
½ pound ground beef
½ pound pork sausage [spicy if fine but not maple]
2 cloves crushed garlic
½ cup each of chopped onion and carrots
½ cup chopped green onions
1 cup tiny cubed cabbage
Salt, Pepper, and Garlic powder, to taste
1 teaspoon soy sauce
30 Spring Roll wrappers
2 cups vegetable oil for frying
DIRECTIONS
Heat tablespoon of oil in large pan. Cook sausage, breaking apart with spoon or spatula. Drain on paper towel. Do same with group beef. Cook fresh garlic, onion and carrot for 2 minutes. Stir in meats. Allow to fry for a moment then add green onion and cabbage. Season and add soy sauce. Remove from heat and allow to cool.
Gently loosen on spring roll wrapper. With one corner point toward you, place a full index finger size of meat mixture about a quarter from bottom. Fold, roll once, fold in sides, and roll tightly. Dip finger in water and dampen edge of wrapper to seal.
Heat ½ inch of oil in frying pan. Fry in batches for 2-3 minutes until golden brown. Drain on a paper towel lined plate.
Serve with your favorite oriental sauce or a mixture of ½ soy sauce, ½ vinegar and grated ginger. Unfried lumpia can be frozen and fried later for a quick lunch or dinner side.
