This is a collection of some of my "easiest" candy recipes that I make for Christmas giving and just to enjoy over the holiday season. Hope you enjoy them.
A couple years ago a friend of mine called. She was so excited as she declared that she had found the best Chocolate Fudge ever and it was so easy. She gave me the recipe and I was shocked. I thought to myself, this cannot be good candy. However I had promised her that I would try it so I had to try it.
Again, I was shocked. It was amazingly wonderful.
This is an odd kinda' recipe so I suggest that you read through it until you are sure of the ingredients. This fudge is adaptable to nearly any flavor from chocolate - butterscotch or Peanut Butter. You simply change the kind of semi sweets you add. Just jazz it up to meet your preferences.
5 Minute Chocolate Fudge
You will need 18 oz of semi-sweets (I use 12 oz of Chocolate and 6 oz of Peanut Butter semi-sweets)
1 can sweetened Condensed milk
1 teaspoon Vanilla
Nuts
Melt semi-sweets in microwave. Add the condensed milk. Mix well & Warm in the microwave. Then add nuts & put in a buttered dish.
Now What I did was use a baking pan with a mold in the bottom. I put the nuts in the bottom and put the candy on top of it. You can also had Marciano cherries to make it look more decorative. Then when it cooled & I took it out and it looked like a Christmas Wreath. I hope I explained this so everyone can understand. It is surprisingly good.

Years ago cooks had to stir and stir the fudge on the stove for a long time. Today we are fortunate. We have better and a larger selection of supplies to use in our cooking and baking. No more putting a spoon of the candy in a cup of water to see if it will form a ball. Thankfully those days are long gone.
Now we are in the 20th century and we are cooking up a storm. Tonight I am making Chocolate-Cream Cheese Fudge. It is so easy and tastes great. So are you ready to get busy making this fudge??
Many people are tempted to put fudge in the refrigerator to cool. Personally I never do this as I think it makes the fudge sticky. Just my opinion.
Chocolate - Cream Cheese Fudge
6 ounces cream cheese, softened
3 cups confectioner's sugar (XXX sugar)
2 cups chocolate fudge
1/2 cup chopped pecans
1/2 teaspoon vanilla extract
Heat the cream cheese in the top of a double boiler until melted.
Add XXX sugar, beating until light and fluffy. add chocolate chips, pecans and vanilla, stirring until chocolate is melted. Press into buttered 8X8 inch dish. Chill for 30 minutes or until firm.

Fudge Ecstasies
12 oz. semisweet chocolate chips, divided
2 oz. unsweetened chocolate, chopped
2 TBSP butter or margarine
2 eggs
2/3 cup sugar
1/4 cup all-purpose flour
1 tsp. vanilla
1/4 tsp. baking powder
1 cup chopped nuts
Preheat oven to 350. Grease cookies sheets (or line with parchment paper); set aside. In a heavy medium saucepan heat 1 cup of chocolate chips, the unsweetened chocolate, and butter until melted, stirring constantly. Remove from heat; add eggs, sugar, flour, vanilla, and baking powder. Beat until combined, scraping sides of pan. Add remaining chocolate pieces and nuts.
Drop dough by rounded teaspoons 2" apart onto the prepared cookie sheets. Bake in preheated oven for 8-10 minutes or until edges are firm and surfaces are dull and crackled. Transfer cookies to wire racks; cool.
