Who says pancakes have to be big and round? Here are some quick ideas for turning pancakes into stacks of fun. I got this in an e mail, and thought y'all might enjoy it too.
- Make funny faces right in the pancakes. Pour batter on the griddle and make blueberry eyes and sliced banana smiles. Once the pancakes are cooked, make freckled, rosy cheeks with dabs of raspberry jam.
- Fill a turkey baster with batter and squeeze it out into fun shapes such as letters, numbers, names, hearts, etc.
- Pour batter into nonstick pancake molds or large metal cookie cutters placed right on the hot pan. For best results, allow the mold or cookie cutter to heat up, then coat it with a little cooking spray before pouring in the batter. Be careful not to burn your fingers when you lift off the molds before flipping the pancakes.
- Cover a finished pancake with a paper lace doily and sift powdered sugar over the top. Carefully remove the doily and enjoy the pattern left behind. You can also do this with solid shapes such as hearts or stars.
- Downsize your cakes: miniature pancakes are fun for kids to eat and save you the trouble of cutting up big pancakes for the youngest ones. They will cook faster than large pancakes, so keep an eye on them.
- Set up a simple do-it-yourself pancake condiment bar with bowls of cooked and fresh fruit, nuts, nut butter, toasted coconut, jams, powdered sugar, syrups, whipped cream, ice cream, and anything else you can think of that would be fun to eat with a pancake.

Oh, and I almost forgot the diet sprite.
Substitute 1/2 the water in batter recipe for diet sprite, (or similiar). The carbonation effect will give you the lightest fluffiest pancakes ever.
