After my $20 shopping trip to Grocery Outlet, my first step was to make up the chili and sweet cornbread dinner meal. The next was a meal of broiled salmon, mashed potatoes and Caesar salad. For lunch the next day, I served up this meal for two:
Classic clam chowder with oyster crackers

It was a simple but filling meal at 88 cents for the chowder and 99 cents for a large bag of oyster crackers (plenty to top that earlier chili, both chowders and more to snack on later....) The chives are fresh from my back porch potted garden.

And here's an "inside look" at the chowder in the bowl. It had a nice amount of clams, something often missing from even the most expensive canned chowders, and a fair amount of potatoes (which I do like in my chowder). It could have used some fresh-from-the-fridge cream and a lot more pepper, but it was pretty good for a less-than-$1 find at Grocery Outlet...

Quineoa ( pronounced keenwa) is very high in protein, easy to prepare and has a mild, nutty flavor. It was the staple grain of the Inca's. It cooks like couscous and can be used the same way, but it is higher in protein. It became a favorite once I discovered it.
Your soup sounds great too. We raise a garden so we do not have to purhase potatoes. Maybe that is why I make so much soup from them. :)
