1 lb. cranberries
1 tsp. orange rind
2 tsp. unflavored gelatin
1/2 tsp. orange juice (from orange)
Artificial sweetener to equal 3/4 c
Place 2 c. of water in a large saucepan. Add cranberries and orange rind.
Bring it to a boil and cook until the cranberries pop open.
Meanwhile, soak the gelatin in 1/2 c of water.
Remove the cranberries from the heat, add the sugar substitute, orange juice, and gelatin, and blend well. Refrigerate until ready to serve.
