Turkey Leftovers?

What does everyone do with Turkey Leftovers?  My family loves Turkey sandwiches and Turkey patties.

I do not really have a recipe for the patties but this is what I do.

I chop up Turkey add to stiff mashed potaotes and an egg.  I then make patties dredge in Italian bread crumbs and fry in a bit of oil and butter  till the outside is crispy and the inside is hot.
Then some of us use leftover gravy and some use cranberry sauce on them.

What does everyone else do??

No turkey this year but I usually buy crossants and make turkey crossant sandwiches.

I make turkey enchiladas. They are pretty easy to make. I use chopped turkey, green chiles, cheese, olives, and green enchiladas sauce.

We haven't had our turkey dinner yet. We are having it on Sunday. I do love to make turkey soup from the leftovers.

Turkey pot pie is another favorite using Bisquik, cream of chicken soup and frozen mixed vegies.

That sounds good! I often make a turkey salad for sandwiches - chopped turkey, chopped grapes, chopped walnuts and mix with Miracle Whip. We prefer Miracle Whip for the sweetness in it. Yummy
