what you will need
2 prepared pie crusts
3 tablespoons of butter
3 tablespoons of milk or water
cheddar cheese~I usually use white cheddar but went for the pre shredded (mild) this time for lack of time to shred my own
bell peppers in yellow,red and green
one large onion preferably sweet
1 8oz container of fresh mushrooms
8 jumbo eggs or 10 large
1 pack of bacon 12 oz is fine I also like to use ham from time to time.
preheat oven~ 450
You will need two cookie sheets of one big one as long as the pie crusts don't touch
Chop mushroom, onion and bell peppers you will use one hand full of each color pepper you can add more or less depending on what you like don't like bell pepper you can leave it out all together add more mushroom or onion.
Fry the bacon to look like this
add butter to a different skillet don't use the one you fried the bacon in and then the veggies on top of it.

put on high heat until the skillet is hot as you are working with the veggies turn heat up or down what ever is needed so that you don't burn them
When the veggies look like above and the oven is ready put the eggs in a bowl and beat them with 3 tablespoons of milk or water both work well
line the bottom of each pie crusts with the vegetable mixture put as much or as little as you would like and then crush bacon over top of it. split the egg mixture between the two pies put them on the cookie sheet and shove in the oven. when egg mixture is done this can take different times so you have to watch it Insert a kinfe to check to see if its done. Take it from the oven and add some cheese and put it back in to melt the cheese
The finished product!! now eat and enjoy. I have mine want a slice?

And the spinach pie - nothing but feta. I can't imagine it with anything else. Feta and Spinach are to die for together.
