I found the following recipe in my collection of "My Great Recipes," a collection I bought several years ago.
1 whole fryer chicken, 2-1/2 to 3 lbs (skinless, for healthier recipe)
1/4 C melted margerine
2 T fresh lemon juice
2 T olive or salad oil
1 t mustard
1/4 t cayenne (can substitute with paprika)
1/4 C minced green onion
2 T minced fresh parsley
1 clove of garlic, pressed
1 t salt
Lemon wedges (garnish)
Wash and dry chicken then split into halves. In a medium-sized bowl, combine melted margerine, lemon juice, oil, mustard and cayenne (or paprika). Brush chicken with half of this mixture. Mix onions, parsley, garlic and salt into the remaining mixture. Arrange the chicken on a broiler pan, skin side down. Broil 5-7" from heating element for 20 minutes. Turn chicken and broil for another 10 minutes. Remove from oven and baste with remaining butter mixture. Continue broiling another 10 minutes or until the chicken is tender and juices run clear. Cut and serve with lemon wedges to squeeze over the chicken. Makes four (4) servings.
