The toffee bits melt during baking and make a crunchy topping to the bars. We have a couple of family members who don't eat chocolate, and a couple who have cardiac problems. This is one of their favorite desserts. These bar cookies are a great addition to a party buffet.
Ingredients
- 1 cup packed brown sugar
- 1/4 c. corn oil margarine, melted
- 2 eggs or 1/4 cup egg substitute
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- Cooking spray
- 1/4 cup toffee baking bits (Heath Brickle)
Preparation
Preheat oven to 350°.
Spray an 8-inch square baking pan coated with non-stick spray.
Whisk together first 4 ingredients in a large bowl.
Lightly spoon flour into a dry measuring cup; level with a knife.
Combine flour, baking powder, and salt.
Add flour mixture to sugar mixture; stir just until moist.
Spread batter in Sprinkle with toffee bits.
Bake at 350° for 20 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan on a wire rack.

My husband doesn't like Chocolate and I sometimes get migraines from too much chocolate, so these could be a nice option for us :)
