Here's a recipe I found recently. It's very good and, considering the need to economize these days, pretty cheap too!
16 oz frozen mixed vegetables
14 oz plain spaghetti sauce
14 oz red kidney beans (drained)
1/2 C grated Parmesan cheese (can substitute pre-shredded cheese)
1 C whole grain rice or whole wheat pasta (optional)
In a large skillet, heat the mixed vegetables with 2 T of water for 7-10 minutes on Medium. In a medium-sized bowl, combine the kidney beans and spaghetti sauce. Once the mixed vegetable are tender, add the beans and sauce, Heat until the entire mix is hot. Grate the Parmesan cheese or fill a half cup with the substitute cheese. Sprinkle over the stir fry. Serve over rice or pasta as desired. Makes 4 servings.
