I got this recipe from a friend of mine a few weeks ago. I just got down from the table from eating them. I was a little wary of all the different flavors of the bacon, marinade and seasonings, but I was very pleasantly surprised of the outcome. I guarunteeeeee you'll love them. These would make wonderful holiday appetizers. You can use any cut of meat, but I recommend the tenderloin, since it's the leanest and most tender of venison.
Grilled Venison Bites
1lb lean venison, cut into bite sized pieces
1/2lb Bacon, cut in half the short way
16 oz Italian Dressing
1-2 tablespoon (or to taste) Tony Cachere's Cajun Seasoning
Wrap bacon around venison pieces and secure with a toothpick. If the bacon is too wide, then cut it in half length wise.
Place wrapped venison, in a single layer, in a non-metalic pan and pour the Italian Dressing over the meat. Cover and let marinade over night
When ready to cook, place marinaded meat on a plate and sprinkle with Seasoning.
Grill until bacon turns crisp, turning often to keep flare ups under control. You can even wrap these and put them all on a skewer for easier turning.
Yield: Approximately 25 good sized venison bites.

I never used the cajun seasoning .
