Okay, I may be stretching the truth just a bit. People were not stepping on each other to buy turkeys. But yes, it is true that turkeys at Safeway are now $.27 a pound!!!! I broke my resolve and bought another. Three turkeys a month may be a little much, but hey! It doesn't get better than this! Unfortunately, I have NO ROOM for this turkey in my fridge or freezer, where there is another turkey already stowed.
Curt had sent me a blonde joke and I was bemusedly laughing over it as I was pulling out of my parking space into the black void. Then I hit something. Fortunately it was a trailer hitch on a truck and did more damage to my car than to the chunk of metal protruding from the back of the truck, and the guy didn't get mad at me. But just between you and me, let's not tell the hubby....about that or my other problem: what to do with the turkey?? For the time being I am keeping it in the back of the car where it is nice and cold, at least until the sun comes out....
I got home and started heating up the beans I had cooked earlier in the day. I put in some chicken and decided to add some veggies. I sauteed an onion and some red bell pepper. Wouldn't corn be a nice addition, too? I reached into the freezer and pulled out a rubber-banded bag with a little corn in it, and dumped it into the chili. Oops! It turned out to be peas, not corn! Who ever heard of peas in chili??
BLONDE MOMENT WHITE CHICKEN OR TURKEY CHILI
INGREDIENTS
1 1/2 c. dried white cannelini or other white bean, soaked and cooked to 3 cups (or three 15-oz cans)
leftover chicken or turkey, about 2 cups
2 c. broth (which can be part bean broth, part something else like chicken broth or enchilada sauce), and broth powder for extra flavor
1 4-oz. can mild green chili peppers or jalapenos, depending on the degree of heat desired (in my case, I used 1 c. leftover green enchilada sauce and didn't add any chilis)
1 or 2 cloves garlic, chopped
1 medium onion, chopped
some red bell pepper, chopped, if you like (up to 1/2 a pepper)
1/2 or more c. corn or peas (only blondes would put peas in)
2 tsp. cumin
1 tsp. oregano
salt and pepper
optional grated cheese to sprinkle on top, such as cheddar or Monterey Jack
fresh, chopped cilantro might be a nice addition
DIRECTIONS
Have your beans at the ready. Saute onions, garlic, and when onions are slightly translucent, add red bell pepper, in 1 or 2 tbsp. olive or vegetable oil. Dump these into the beans and throw in the meat, the corn or peas and the herbs and cook till heated through. Season to taste with salt and pepper.
Serves 6
