I served this with fish and rice tonight. It was very tasty. I thought that the cheddar got a bit greasy as it melted so next time I will use a different cheese.

Broccoli Souffle

1 cup 1% fat cottage cheese
3 eggs
1 1/2 cups thawed broccoli florets
3 tb all-purpose flour
1/4 cup butter -- melted
1 cup sharp cheddar cheese -- shredded
1 tb minced onion
1 ts black pepper
1 tb Penzeys Mural of Flavor
1/2 ts sea salt
Preheat oven to 350 degrees. Mix all the ingredients together in a greased 1 quart casserole. Sprinkle with a bit of the cheese on top. Bake at 350 degrees F for 45-50 minutes. It will rise up and be set (not wiggly) and turn golden brown when ready.
Serve immediately.

Original recipe called for black pepper, salt and thyme. I used Mural of Flavor instead.
