I make a "mean" tuna casserole they they just love! With tuna, noodles and veggies! YUM!
Salmon cakes
1 can salmon
1/4 c. butter, melted
1/2 tsp. pepper
1 tsp. salt
2 eggs
1/2 c. bread crumbs
2 tbsp. flour
1 tsp. Worcestershire sauce
Sometimes I rifle through our crisper drawers and chop up various vegetables to add color and texture. I find red peepers lend a nice, sweet taste to the final product.
Mix all ingredients and shape into small cakes. Some people then fry the cakes, I prefer to bake them at 375 degrees until they are golden brown on both sides.

Do what my Mom did! If I didn't like what she made for dinner, I was welcome to make something for myself - That is prepare, cook and clean-up the kitchen afterwards.
In fact, my brother and I made most weeknight dinners, since both Mom and Dad worked. We even did the grocery shopping, too.
If your Son balks, tell him that 'The Quickest path to a girl's heart, is through her stomach.'
Get him started cooking and you'll be rewarded with delicious and creative home-cooked meals in your old age (or for Mother's Day)! And you'll probably be rewarded with a future daughter-in-law who appreciates you for teaching your son this valuable lesson.

I was introduced to these delicious little patties not too long ago by my boyfriend's father. They own a restaurant, and his dad learned it from one of the chefs a long time ago. They do it a little different, instead of bread crumbs, they use crackers, like chezits. Then to put over the top, they heat up a jar of Marie's white sauce, shredded cheese and a bag of frozen peas. Kind of a quick meal my Man and his (then)bachelor dad lived on for a while. :)
I was a little hesitant at first, but it was not too shabby after all!

Easy Parmesan Crusted Fish Dinner
Prep Time:10 min
Total Time:18 min
Makes:2 servings
What You Need
2 white fish fillets, (4 oz. each) such as talapia, scrod or halibut
2 Tbsp. Light Mayo Reduced Fat Mayonnaise
4 tsp. Grated Parmesan Cheese
1 cup Stuffing Mix for Chicken in the Canister
1/2 lb. green beans, trimmed (2 cups)
1 small lemon, cut into 4 wedges
2 whole grain rolls
PREHEAT broiler. Place fish on rack of broiler pan. Spread fish evenly with mayo; top with Parmesan cheese.
BROIL 5 to 6 inches from heat source, 6 to 8 min. or until fish is golden brown and flakes easily with fork, depending on thickness of fish. (If your broiler does not allow you to position fish 5 to 6 inches from heat source, follow Baking Directions below.)
MEANWHILE, prepare stuffing mix as directed on package. Cook green beans. Serve fish with stuffing, green beans, lemon wedges and whole grain roll.

Baking DirectionsPreheat oven to 475°F. Line baking pan with foil; spray with cooking spray. Place fish in pan; top as directed. Bake 5 to 7 min. or until fish is flakes easily with fork. Sprinkle with paprika, if desired
I often baked it with a topping made of mustard, lemon juice, garlic and a bit of spices including oregano, parsley and paprika. This mixture I would just brush on before baking, and the combination of flavors and texture kept the top of the fish from becoming dry and it required no salt for flavoring.
