I love chicken salad. Plus it is quick to make, and it is a great way to use up chicken when you have leftovers. We smoked a couple of chickens over the weekend, since we already had the smoker going for some pulled pork. So we had plenty of extra chicken that I needed to do something with. You can also just boil a couple of chicken breasts and then shred them up also though.
I usually make mine with almonds and sliced grapes, and I did have both of those in the house, BUT I felt like making it a bit differently last night. I had some cranberries in the cupboard that I had been wanting to try in some chicken salad so instead I used dried cranberries and some crushed pecans.
These are aproximates because as usual I just throw a bit of this and a bit of that into my cooking and unless I am baking something I don't usually use a recipe.
2-3lbs of cooked chicken
1/2 to 3/4 cup dried cranberries
1/2to 3/4cup crushed pecans (tiny pieces)
1 cup mayo~ you may need more or less depending on how dry or wet you want the salad to be
Pull or cut cooked chicken apart into small pieces. Or sometimes I even stick mine in the food processor and chop it up real good. Throw the cranberries, pecans, and mayo into bowl. (I usually use 1/2mayo and 1/2 miracle whip) Mix this together, then add the chicken and mix up. Chill in the fridge for a couple of hours so that the mayo can get absorbed a bit by everything.
Tastes yummy on a croissant, or last night we ate it on some yeast rolls we got from Sam's Club that are really good. Then you can also add a slice of cheese, tomato, lettuce or whatever else you would like to your bun. I like to put cheddar on mine!
