Number of Servings: 3 dozen
Ingredients:
1 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
2/3 cup prepared applesauce
1/2 cup butter, unsalted
1/2 cup Wisconsin Cheddar cheese, shredded
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 cups rolled oats
Cooking Directions:
Preheat oven to 350. Sift together flour, baking soda, salt, and nutmeg. In large bowl, cream butter, brown sugar and Wisconsin Cheddar cheese. Beat in eggs and vanilla extract. Stir in flour mixture. Stir in oatmeal and applesauce. Drop small spoonfuls of batter onto a lightly greased cookie sheet. Bake 10-12 minutes. Remove from oven and cool on a wire rack.
I made this this week and had a few friends taste test them and give me their opinions:
Surprised there is cheese in them, cannot taste it.
Very soft and moist.
Can taste the nutmeg (some liked that, some thought it was a bit strong).
I ended up adding about another 1/4 cup of flour to the mixture after I baked a couple of test cookies. That seemed to help them hold their shape better.
