Preheat oven to 350
Ingredients:
2 ½ cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ground cloves*
1 teaspoon salt
½ cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups applesauce
2 cups raisins
Instructions:
Mix the first five ingredients. Cream together shortening and sugar. Add applesauce to the creamed mix, then mix in the dry ingredients. Add the raisins.
Pour mixture into a greased and floured 9X12 inch baking pan and bake at 350 degrees for 45 minutes.
Variation:
To make cookies using this recipe, add 5 - 6 cups of oatmeal, drop by teaspoonfuls onto greased cookie sheets, and bake them at 375 degrees for 11-12 minutes.
Other optional ingredients:
Butterscotch chips, ground walnuts
* I don't care for cloves, so I leave them out and add more cinnamon.
If desired, mix powdered sugar, ½ teasp. vanilla extract, margarine and a few drops of milk to make a vanilla glaze. Spoon the glaze into a plastic sandwich bag, make a tiny cut at one corner, and squeeze glaze over cake.
