What to do with boring old pork chops? Spice them up with tropical flavors! Not too complicated, but delicious and different. I served them with rice and a salad. The recipe is from Cooks.com.
HAWAIIAN PORK CHOPS
4 - 6 pork chops
1 med. size onion, chopped
1 c. pineapple cubes
2 tsp. cornstarch/ 1 tsp. salt
Dash pepper
2 tbsp. brown sugar
1/2 c. canned pineapple juice
1/4 c. lemon juice
(I added 3 chopped cloves of garlic)
Arrange pork chops in your large skillet. Do not add fat. Brown, uncovered, about 6 minutes on each side over medium heat. Remove pork chops from skillet. Pour off all but about 2 tablespoons of the fat (I actually had to add some oil). Add onion and pineapple, brown slightly. Mix together remaining ingredients and pour into skillet. Stir constantly and cook until thick. Place the browned pork chops in the sauce. Cover with vents closed. Cook over simmer heat about 45 minutes or until tender (I did add water from time to time, and didn't cook the pork chops this long). Serve with steamed rice and a vegetable salad. Rice may be steamed above pork chops.
