Well, we are now cleaning out the vegetable gardens. It was a pretty good year other than trying to keep the critters out of them.
I managed to can tomatoes, tomato sauce, hot peppers and salsa. I also made saurkraut. We had alot of cucumbers and cabbage. Last night we had eggplant parmesan.
Yesterday I made hot pickled vegetables. The picture is below. You can leave out the hot peppers if you like. They are so good. They have green peppers, red peppers, hot peppers, carrots, onions and cauliflower. Then they are canned in a vinegar mixture.
Now I am concentrating on our apples, pears and grapes. Been a pretty productive year.
I dehydrated some hot peppers. I still have to dry my thyme, oregano, sage, and basil yet. I still have time to do that, though.
How did your gardens do? Oh, and I froze around 12 gallons of blueberries.
