Mom's Lemon Bars
Crust:
1 c. flour
1/2 c. butter
1/4 c. powdered sugar
Spray 8-inch pan. Mix and put in pan. Bake at 350 degrees for 20 minutes.
Filling:
2 eggs, beaten
2 Tbsp. real lemon juice
1 c. sugar
1/2 tsp. Baking Powder
2 1/2 Tbsp. flour
Pour on baked crust. Bake 20 minutes more.
Frosting:
3/4 c. powdered sugar
1/2 tsp. vanilla
1 Tbsp. butter
1/2 Tbsp. milk
Spread on bars quickly while still warm. Garnish with rainbow sprinkles if desired. Refrigerate. Cut into tiny squares. Right before serving, top each bar with fresh violets.
