1/2 cup tofu, firm
1 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quinoa, cooked
3/4 cup Splenda
3/4 cup brown sugar
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon sea salt
1 1/2 cups old-fashioned rolled oats
1 cup semisweet chocolate chips
1. Preheat the oven to 375 degrees.
2. In a mixer, beat the tofu until smooth and creamy. Add the applesauce and keep mixing. Add the vanilla extract.
3. In a separate bowl, sift the flour, the quinoa, Splenda, sugar, cinnamon, salt and baking soda.
4. Gently mix the dry ingredients into the applesauce / tofu ingredients.
5. Fold the oatmeal and chocolate chips into the mixture.
6. Place dough in walnut-sized pieces about 1 inch apart from each other onto a prepared cookie sheet. Press down the cookies slightly before baking.
7. Bake 12 - 15 minutes, until golden brown.
8. Cool.

Donna: Buy a Gluten-free oatmeal (like Bob's Red Mill) and use that in place of the oatmeal. And then try substituting the flour for brown rice flour.
Quinoa looks like tiny cream-colored beads that turn translucent when cooked. It cooks a lot like rice, only in half the time! It can be used in soups, stews, main dishes, casseroles, side dishes, desserts, you name it!
The substitutions we made, due to ingredient unavailability, were:
1. in place of the flour we used a homemade baking mix comprised of brown rice flour and garbanzo bean flour with the baking soda, baking powder and salt mixed in)
2. we used agave nectar and pure apricot jam in place of the sugars (couldn't get date sugar but will try that next time around)
3. carob chips (although next time we want to try using grain sweetened chips)
So, given that this is astride of your recipe, it was tasty and the texture was like that of a moist brownie. We made it two ways: as a drop cookie and in a mini-muffin tin and both were moist and flavorful. Next time we agreed to try to make an 8x8 pan and cut it into bars instead. All in all, we were pleased with the results and would definitely make these again.
