There are a lot of pretty bad recipes posted on Gather, a lot of my Gather buddies know that I tend towards vegetarian cooking and foods, so here goes one of my favorite veggie dishes.
I know some may knock it, but just remember a bad diet is the quickest way to poor health.
1 bunch of greens (collards or others)
2 med onions- chopped
1 med eggplant- chopped fine
2 tsb garlic- chopped fine
2 med tomatoes sliced
1/2 cup of oil- I use olive
Salt- I use sea salt
1. Shred the greens
2. Cook the greens in large skillet or med size pot in 1/2 cup of oil and 1 cup of water with eggplant for about 12 mins.
3. Saute the onions with tomatoes and stir into greens after pouring off the pot liquor
4. Add garlic and salt to taste.
6. Enjoy this healthy dish!

Remember now: the best greens anyone every tasted were made WITHOUT any pork. I know, because I made them.
Weeeeeeeeell . . . in truth, they were my uncle's recipe, and he was an award winning chef, but I still MADE THEM.
This recipe is doggone good too, though!
