Here's the background. Daughter needed something quick and easy to take to a potluck at work. I didn't have a thing in the freezer for her to take, so Mamma to the rescue. This was the recipe, which was a HUGE hit, btw.
2 lbs ground beef, pork, turkey or veggie crumbles, your choice.
1 box cheeseburger hamburger helper (use the water/milk directions on the package)
1 box macaroni and cheese
1 pack taco seasoning
2 can of rotel
1 can of diced green chilis
1 medium/large tub sour cream
1 pack Mexican / taco blend shredded cheese
2 tsp roasted garlic
salt and pepper to taste
Directions:
Combine the Hamburger Helper with the seasoning pack, water and milk as described on the box in a microwavable container. Add the mac and cheese pasta and seasoning and stir well. Place in the microwave and cook about 15 minutes, stirring at least once.
While the pasta is cooking, brown the meat with the taco seasoning and roasted garlic. Drain well.
In a large casserole dish, combine the cooked pasta and sauce, the meat, the rotel, the chilis, salt and pepper to taste. Mix well. Top with the shredded cheese and pop in the oven until the cheese melts to your desired done-ness. Serve topped with sour cream.
As a side, serve a small salad and crusty bread or tortilla chips.
