
Being first up most mornings I get the coffee started and a fire going and then I BAKE.

I usually use a muffin mix and add lots of fruit, nuts and seeds to it.

This morning I used blueberry muffin mix and added grated apple, a mashed overripe banana, some dried apricots and walnuts. I also added a spoonful of brown sugar to the mix.

It gets mixed together, adding just enough liquid to make it the right consistency.

A Cast Iron Dutch Oven with a metal trivit in the bottom (to keep my cakes off the heat) covered with aluminum foil and sprayed with Pam does the trick.
It's ready to go on the fire.

Now is the best part. It's ready to eat. Because it's not a real oven, it doesn't get toasty brown. I test it by touching the top. When it's solid, it's done.

You can smell the lovely aroma while it cooks. Now it's time for breakfast!

A cup of coffee, a bit of butter and a good game awaits Elaine and I. What a wonderful way to start another day at camp!

I've baked buiscuits in a fireplace but have never baked a coffeecake in a campfire....
I have a friend who does a lot of campfire cooking so am e-mailing him this essay!

I've done a bit ofit as a Girl Scout leader years ago. You know, the banana boat thing and stew pockets in foil.
